sweet stuff sunday: vegan brownies

OMG. today's sweet stuff sunday treat was SOOOOOOO GOOD. I actually made these to share with a few people who are vegan and GF, as well as try out something new since I am eating smarter... 

note: I am not vegan, but vegetarian, and trying out whole food, plant based eating for health reasons. This post was mainly to prove to myself that 'cheat day' junk food can still be filled with good stuff and delicious while containing no animal products or preservatives. 

Ingredients:
2 T cornstarch
3 T warm water

1 C all purpose flour 
(I used Cup 4 Cup GF flour because I am making for a friend who has celiacs)
1/2 C brown sugar
1/4 C cocoa powder
1/2 teaspoon fine ground salt
1/2 teaspoon cinnamon
1 teaspoon baking soda
1/4 C smashed avocado
3/4 C chocolate chips
1/4 C maple syrup
1/4 C coconut oil

First, preheat your oven to 350...
Mix your cornstarch and water in a small cup or bowl, and set aside....

Mix together your flour, brown sugar, salt, cinnamon, cocoa, and baking soda.....
now, add the mashed avocado, and 'mash-in' with a fork.... set aside.
Put your chips, coconut oil, and maple syrup in a saucepan and melt until a chocolate sauce forms....
stir the cornstarch and water up one more time and add to the warm mixture, then add the warm mixture to the dry ingredients....
Line your 6 x 8 (or similar) baking dish with parchment paper and spread the mixture...
Bake for 25 - 30 minutes depending on whether you use a glass or metal dish, and make sure a toothpick inserted comes out clean. 
viola! Yummmmmmmy vegan and gluten free goodness. 
served up with a cold glass of creamy oat milk! 

these were sooooo good and I actually made two batches - one with 1/2 C coconut oil and no avocado (everything else in the recipe above was the same), and the one I posted here - both were equally good, but the double coconut oil batch was a bit more crispy - like corner pieces..yummm. Christian grabbed us some Impossible Whoppers on his way home from work (it was my cheat day), and we watched 'Zombieland Doubletap'. Christian said these brownies were out of this world, and I have to agree. I don't know that I will ever go back to the traditional recipe. 

I only was able to make it halfway through the movie before I had to go to bed. Ahhhh. Too much fun to be had yesterday on the farm - first sunny day in several days. 

I am off to work with a shelter dog or two, but will be back tomorrow with hopefully some bangs to show off!
