weekend snapshots and a sinful cake recipe....



 



.................and now for the most delicious cake I think I have ever made.... and sadly I winged the icing and forgot to write down amounts as I was making it, so use your favorite buttercream or cream cheese icing for this. I am going to make this again next month, so will repost with the icing that was DIVINE!

ingredients:

cake:

1 3/4 C all purpose flour (or a GF blend)

2 C sugar

3/4 C unsweetened cocoa powder

2 tsp baking soda

1/2 tsp baking powder

1 tsp fine salt

3/4 C full fat plain greek yogurt

1/2 C sunflower oil

3 large eggs

2 tsp vanilla

1 C Guinness beer

preheat oven to 350, and put three round cake pans in the oven, each with 2 T butter....

... then sift all of your dry ingredients (flour, sugar, cocoa, salt, baking soda, & baking powder) together...
... now add all of the rest of the ingredients to a medium mixing bowl, putting the beer in last here, then whisk this together. Fold into the dry mix and stir with spatula until just combined - don't over mix.......

pour batter into your brown-buttered cake pans......
..bake for 30-35 min, making sure a toothpick inserted comes out clean... I didn't have any so as you can see a fork worked just fine :)
let cool completely, then ice with a buttercream or cream cheese icing. I used a greek yogurt, butter, baileys irish cream, and confectioners sugar combo for mine, but forgot to write down measurements...


I also forgot to take any good pics of the whole finished cake because I gave so much away and we finished off the rest. Next time! For now, take my word that this cake is heavenly!!!
