I made vanilla cupcakes with a super delish homemade icing made from fresh blackberries....
ingredients for the cupcakes (this makes 6 extra large cupcakes)
1 2/3 C all purpose flour (I use Cup 4 Cup for a GF version)
1 C sugar
1/4 tsp baking soda
1 1/2 tsp baking powder
1/4 tsp salt
3/4 C sunflower oil
1 T vanilla extract
1/2 C sour cream
1/4 C milk
preheat oven to 350
combine dry ingredients in a med bowl
in a stand mixer, mix the sunflower oil, eggs, vanilla, sour cream, and milk..
add in the dry mix and just incorporate - don't over mix
drop spoonfuls into your cupcake liners, just a little over half full, and bake for 30 minutes.
after they are done, let them cool while you make the icing....
1/4 C (or 1/2 stick) of softened butter
I forgot to measure out the exact amount of confectioners sugar, but you want maybe 3 C to start.
blackberry puree (I have no tools for this, so just smashed up the blackberries in a strainer to eliminate the seeds....
in your stand mixer, add the sugar to the butter and mix until it is course...
add your blackberry puree (use as little or as much as you like, to suit your taste) the more puree you use, the more sugar you will need...
after your cupcakes are cooled completely, pipe on or swipe on with a knife, and top with a blackberry!
