sweet stuff sunday: mini vegan cinnamon rolls

ingredients:

dough:
2 2/3 C Cup 4 Cup flour (or all purpose if they don't need to be gluten free!)
1/4 C sugar
1 tsp pink Himalayan fine ground salt
1 packet instant yeast

3/4 C oat milk
3 T vegan butter or coconut oil
1 T ground flaxseed
3 T water

filling:
6 T softened vegan butter
2 T ground cinnamon
1/2 C brown sugar

glaze:
1/2  C oat milk
2 C confectioners sugar
2 T softened butter


Mix the first 4 ingredients into a large mixing bowl

in a small saucepan, add the oat milk, vegan butter, ground flaxseed, and water and heat on medium heat just until the solid butter or coconut oil is melted, so watch closely because you don't actually want this to cook...

after all is melted, pour this mixture into the dry mixture in your large mixing bowl...

using the dough hook attachment, you want to just combine all the ingredients. Now remove from the bowl and knead 4-5 times and then roll into a ball and let rest in a bowl for about 10 min....
While your dough is 'resting', mix together in the same mixing bowl that your dough came out of, the softened butter, cinnamon, and brown sugar. 

now roll out onto a floured parchment sheet into a rectangle about 8" x 14", and shape the edges if needed. I needed to shape mine a bit....

spread your filling onto the dough.....
roll it up.....


Now cut into even 'slices' and place them into a greased 9" cake pan or pie dish.

let rise in the oven covered loosely with foil for about 30 minutes.

take off the foil, and set oven to 375, and bake for 30 minutes....
 make your glaze with the oat milk, softened butter, and confectioners sugar and pour over the warm buns....
 eat warm. YUM.
