Sunday Sweet Stuff: vegan salted pecan & chocolate chip cakey cookies!

these are super easy to make and these were SO GOOD. 


2 1/4 C flour (all purpose works great, or you can use a GF flour such as Cup 4 Cup like I did in this recipe!)
1/2 tsp baking soda
14 T room temp softened butter (I used Miyokos cultured vegan butter)
3/4 C sugar
1/4 C dark brown sugar
1 tsp pink himalayan salt 
1 T vanilla extract
2 "eggs" - I used Neat Egg this time, but in the past have used cornstarch, flaxseeds, and even applesauce. 
9 oz chocolate chips 
1 C chopped pecans

preheat the oven to 350....

in one bowl whisk together your flour and baking soda... In the bowl of the mixer, combine the softened butter and both sugars. Mix until light and fluff, then add your salt, vanilla, and 'eggs'.

when completely combined, spoon in your chocolate chips and your pecans...

spoon out onto parchment lined baking sheet and bake for 15-17 minutes. 

...and yummmmmm.
