sunday sweet stuff: the last of the strawberries...


ingredients:

2 eggs
2 T butter
1 C sugar
1 C sour cream
1/2 C vegetable oil
1 tsp vanilla extract
2 C all-purpose flour
2 tsp baking powder
12 oz. fresh strawberries

whipped topping (optional) - we have also made this with a confectioners sugar dusting and it is just as delish!
2 C heavy cream
1/2 C confectioners sugar
1 tsp vanilla extract

instructions:
preheat oven to 375. put your 2 tablespoons of butter into your 9" round *deep* cake pan and pop it into the oven to melt. I forgot about mine, so my butter was browned - you can do this too as it was excellent!
Once the butter is melted tilt the pan to slowly swirl around and get all on the sides as well...

Slice half of your strawberries, and cut into chunks the other half. Keep the slices and chunks separate.

In a stand mixer, beat the eggs and sugar until smooth. 

Now add the sour cream, oil, and vanilla to your egg sugar mixture on low until completely combined.

In a medium bowl combine the flour and baking powder, then add to your stand mixer with the eggs/sugar mixture. Mix until smooth, but don't overmix....

Now pour half the batter into your prepared cake pan. 

Top with the chunks of berries, 

then pour the rest of the batter on top and spread the sliced berries over the top. 

Pop in the oven for 50 minutes.....

You can now dust with the confectioners sugar while it is warm, and enjoy OR let it cool completely and make your whipped topping.....

For the whipped topping, pour your heavy cream, confectioners sugar, and vanilla into your mixing bowl, whisk on high until heavy peaks form. dollop on your cooled cake and keep refrigerated.
