sweet stuff sunday: blueberry cobbler

I got up early this morning and picked blueberries while it was cool and breezy... then went home to see what ingredients I could throw together for the first 'sweet stuff' post in quite some time...

honey, a little bit of sugar, butter, gluten free flour, a little salt, baking powder, eggs, vanilla extract, grapefruit juice, and of course blueberries!



filling:

3 C fresh blueberries
5 tablespoons granulated sugar
1/3 C grapefruit juice

cobbler crust:

1 stick softened butter
1/3 C raw honey
2 tablespoons granulated sugar
1 egg
2/3 C flour (I used GF, but you can use all purpose)
1/4 tsp baking soda
1/4 tsp salt
1 tsp vanilla extract

first preheat oven to 375.

in a small bowl, add flour, salt, & baking soda together and mix

in the mixing bowl, cream together softened butter and honey, and the 2 tablespoons of sugar.

add egg and vanilla and continue to mix. you may have to scrape the sides a few times to incorporate it all.

now, add flour mixture and mix well for about a minute.

in a 8x8" baking dish, add blueberries, juice, and 5 tablespoons sugar and mix until all berries are covered in sugar & juice.

now spoon out dough mixture onto blueberries. try to make sure all berries are mostly covered, but unfortunately it is hard to spread...

now pop into the preheated oven, and bake 35-40 min until crust is golden brown and the berries are bubbly.....
annnnnnnd enjoy!

this was delish and the consistency was really soft and cakey - maybe because I used honey? Not sure but it was still amazing! It was like an angel's food cake type cobbler... and is almost gone....
