Sunday Sweet Stuff: best chocolate cake ever.....really!

 It was Christian's 40th bday last week and I took it upon myself to whip up a chocolate cake that was out of this world DELICIOUS!!! The ingredients in this cake, make for a mile long grocery list, but so very worth it....



Ingredients for cake:

PLEASE make sure you follow the steps in order.

1 3/4 C flour or GF flour like Cup 4 Cup
1 3/4 C confectioners suger
1/2 C granulated sugar
1/4 C brown sugar
3/4 cup cacao powder or unsweetened cocoa powder (high quality if possible)
2 tsp baking soda
1 tsp baking powder
1 tsp fine ground salt
1/2 C coconut oil
2 eggs
1/2 C milk (I used raw goat milk)
1/2 C sour cream
2 tsp vanilla
1 C hot water


First, preheat oven to 350, and then mix all dry ingredients (flour, confectioners sugar, granulated sugar, brown sugar, cacao powder, baking soda, baking powder, & salt) in a large mixing bowl.....
In a medium sized bowl, whisk together all your other ingredients EXCEPT FOR THE HOT WATER:
(coconut oil, eggs, milk, sour cream, vanilla)
 ...add wet ingredients to the dry ingredients and whisk (or mix):

 AFTER wet and dry ingredients have been combined, add the HOT WATER, and mix....
 Pour mixture into three 8" circle cake pans and bake for 25 minutes or until toothpick inserted comes out clean.

NOW, make your frosting....

Frosting ingredients:
1 C softened, room temp butter
2 tsp vanilla
1 C cacao powder
1/3 C milk
5 C confectioners sugar

With a mixer, mix the butter & vanilla together. Add cacao. then milk... then the confectioner sugar. Whip until light and fluffy (I got sidetracked and forgot to take more pics!) 

Let cakes completely cool before frosting! annnnnnnd viola!
