Sweet Stuff Sunday!!! Buttermilk Pie.....

 It's been a few days since I posted last, but lemme tell ya, this girl has been BUSY. I will hopefully (fingers crossed BIG TIME) have some exciting news to share with my readers in the coming weeks that involves the farm.....
But because of this anticipation I have been on an emotional roller coaster! High, low, happy, scared, on top of the world, scraping the bottom of the barrel, anxious, excited, and everything in between! Saturday night, Christian and I indulged in some porch sittin', listening to crickets chirpin', wine sipping, beer drinking together time...... it did help take the edge off a bit...
Upon waking on Sunday (without a headache - cha-ching! WINNING), I headed out to the farm to see the babies, then went home to start on the day's sweet treat.... buttermilk pie.....

What you will need for the filling:
3 eggs
2/3 cup sugar
1/2 cup honey
2 tablespoons flour (I used Cup 4 Cup GF flour)
1 cup buttermilk
1 teaspoon vanilla extract

What you will need for the crust: (you can also just use a ready made crust)
1 Cup flour (again I used GF flour)
1 stick of butter
jusssssst enough milk to make it all stick together, maybe a 1/4 C....

 Preheat the oven to 350....
I make the crust first and then pop it in the oven while I make the filling...
First put the 1 Cup flour in a bowl and grate the stick of butter and mix all together, even though the butter had been grated, you may still need to cut with a fork or pastry blender...

 When your flour and butter is evenly mixed, start adding the milk so that you can form a ball and then dump out onto a well floured pastry cloth or parchment paper...
 roll out to that it is big enough to be fill your pie dish...
 ...shape the edges (I am not so good at this, so mine isn't that pretty) and pop in the oven for about 8-10 minutes with a pie weight (I used a small Pyrex lid)
 Now whisk all of the filling ingredients together in a bowl...

 Pour into your pie shell and bake for about 45 minutes...
 I have no idea if this was supposed to happen, but it did...
 ...and then it settled...
Tada! It was pretty good - I have never had a buttermilk pie before and the aroma that permeated from the oven while it was baking was almost so heavenly you could get drunk on it!
