sunday sweet stuff: strawberry cobbler

It is strawberry season and I do love baking with things that are in season when able!

My mom and I drove up to North Carolina to see a man about some chickens, which didn't come home with me yet, but on the way back, we stopped for some fresh strawberries....

This recipe is super easy, and you most likely have everything you need for it at home already aside from the fresh berries.

ingredients:

1/2 C butter
1 C flour (I used Cup 4 Cup GF flour)
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 C sugar
1 1/2 C light brown sugar
1 C milk (I used fresh goat milk)
1 teaspoon vanilla extract
4 C fresh strawberries 

preheat oven to 350, and put the butter in your 9x13 baking dish and pop in the oven while it is preheating....

wash, cut the tops off, and slice in half your strawberries...

use the 1/4 C sugar to toss the berries in, make sure they all get coated...

whisk flour, baking powder, salt, brown sugar together, then add the vanilla & milk and continue to mix until all combined...

take your pan with the melted butter out of the oven and pour in the batter - no mixing or stirring, just pour it in...

evenly distribute the berries on top....

...and bake for 45 minutes. 

allow to cool a little so it settles and then enjoy! I didn't get many pics after the fact because it was gobbled up quickly! I did share with a few people and all enjoyed this recipe!
