Sunday Sweet Stuff: Strawberry Icebox Pie

 This weekend's 'sweet stuff' is a strawberry icebox pie. Christian prefers the graham cracker crust over the typical pie shell, so again this butter graham cracker crust holds the most deeeeelish filling....

Ingredients:
2 packages of graham crackers (usually 3 in a box), crushed, then used in the coffee grinder until fine crumbs were all I had...
1/2 C butter

2 eggs
2/3 C sugar
3/4 C milk
3 Tbsp cornstarch
1 Tbsp butter
2 C sliced strawberries

2 C heavy cream
1/2 C confectioner sugar
1 Tbsp vanilla extract

Make your crust:
mix cracker crumbs and melted butter, press in to pie pan, bake at 375 for 10 min, set aside.
 Make your filling:
whisk eggs and sugar in a medium bowl.
measure out 2 tablespoons from your 3/4 C milk, and whisk that with your cornstarch. Now add cornstarch/ milk mixture to the eggs & sugar and whisk until smooth....
Melt the 1 tablespoon butter in a medium saucepan, add the rest of the milk, and let steam, but not boil for about a minute.
Add egg/ sugar/ milk/ cornstarch mixture to saucepan and store constantly until a pudding type consistency occurs.....

Pour filling into pie shell, and spread out and up the sides of shell...
Stick shell into freezer for about an hour...
now fill with strawberries.....

make your whipped topping by adding heavy cream, vanilla, and confectioner sugar to a stand mixer and mixing on high until firm whipped topping is your final product...

top your pie, pop in the fridge for about an hour, and ENJOY!!
