Sunday Sweet Stuff!!! Cacao, Pecan, & Salted Cookies!

I had to bake something with these pecans I just gathered! I am so excited about getting pecans this year!! I guess since I missed out on my peaches at the new place this year, it was only fair I got this big bounty of these beautiful and tasty nuts!!! Yay!
1 1/8 C Cup 4 Cup
1/2 tsp baking soda
1/4 tsp salt
1 stick butter
1/4 C+ 2 Tb sugar
1/4 C + 2 Tb dark brown sugar
1 tsp pure vanilla extract
1 egg
1 Cacao chips (I used 60% Ghirardelli chips)
1 C chopped pecans toasted in 2 Tb brown butter (optional)
some coarse sea salt or kosher salt for sprinkling on top of cookie dough just before baking
(this recipe makes a dozen large cookies)
In a pinch, my metal snips worked jusssssst fine as a nutcracker ;)
First preheat oven to 375, then put your flour or Cup 4 Cup, baking soda, and salt in a bowl and whisk together.
 Put your melted butter, sugar, brown sugar, egg, and vanilla extract in a bowl and mix with a fork...
 
 Now, in a skillet, put your 2 Tb butter and pecans and toast until a golden brown - I also chopped mine with the spatula while I tossed them in the butter...

Now, dump the sugar & butter mixture into the dry flour mixture and slowly incorperate with a fork until mixed completely....



 Now, pour in the cacoa chips and mix...

 Now stir in the buttered pecans......
 ...and take a spoon and spoon out onto a cookie sheet and sprinkle with a little coarse sea salt....
 Bake for 7-10 minutes, depending on how big or small you want your cookies....


Yummmmmmm that was GOOOOOOD!
