Sweet Stuff Sunday: GF Sour Cream Coffee Cake!

My secretary gave me this awesome cookbook and I decided to choose my Sunday Sweet from it. I am going to include the original recipe, as well as my alternative gluten-free adaptation. Also, I picked a recipe that I pretty much all of the ingredients for, because I did not want to make a store run, so mine doesn't have walnuts, but I made a glaze out of butter, confectioners sugar and goats milk.

My GF adaptation:

For cake batter:
1 C sour cream
1 tsp baking soda
1 1/2 C, + 1TB "Cup 4 Cup" GF flour
3 Tb cornstarch
1 C sugar
2 eggs
1 tsp vanilla
1 stick butter

For filling:
3/4 C brown sugar
2 Tb softened butter
1 Tb cinnamon

Sift together the GF flour and cornstarch and prepare the recipe just as the one posted here IF you wanted the GF version. My version omits the baking powder and replaces the flour with GF flour as well as I added cornstarch.






I made a glaze from 3 Tbs melted butter, 1/2 cup hot water, and enough confectioners sugar depending on how thick you want your glaze...

Mine was sooooooo good! I paired it with a nice ice cold glass of raw goat milk!
