Saturday's breakfast experiment...

I decided this morning to try something new - a breakfast pizza! I am a lover of pretty much all things not that healthy for me, but have been limited on things like doughnuts (which were staring at me all day yesterday at work - the Krispy Kreme ones.... ), pizza, most breads, and cakes due to the gluten sensitivity I recently discovered within the last year or so. That makes it a bit easier to resist these foods, but there is this AWESOME company called Cup 4 Cup and I have used their 'all purpose flour' for making biscuits, cookies, and cakes that have all turned out HEAVENLY! Well anyway, I discovered they have their own pizza dough blend, so I wanted to try it out for a new idea for breakfast...

This breakfast pizza is going to be gluten free, hearty, cheesy, bacon-y, and deeeeeeeelish!

I am going to use pizza sauce, eggs, bacon, Brussels sprouts (because I have become obsessed with them lately), and cheese.

First hoping this crust is as good as the rest of the things I make with this miracle GF flour.... it didn't turn out very pretty and the shape was a little wonky, but hopefully it will taste good!

 Then baking the bacon (I always bake it because it is soooo much easier than pan frying)....

Sauteing the Brussels sprouts in some of the leftover bacon grease.....
 ......and now constructing this experiment....

pizza sauce. check. Now gonna break open four eggs and discard about half of the whites from each egg...

 Then plop each egg yolk onto the saucy dough one by one and pour out any remaining whites evenly over....
 I poked each yolk with a fork just because I don't like runny eggs... I want them to be cooked through...
 I popped the dough, sauce, and eggs into the oven until the eggs looked almost cooked through...


Then, I cut up the bacon by just using a pizza cutter and kitchen towel - gets off any excess grease and gets the job done fast.....
 ....added it to the pizza....
 .....then on went the Brussels sprouts.......

 ......Italian cheese blend..... and this baby is ready for the oven!
 I cooked until the cheese was nice and melty and .... look... at ... what... came... OUT. (drool)
 If this tastes half as good as it looks, I am gonna be happy with my experiment.....
 ...ohhhhh yeah! This was a hit with Christian and I loved it as well!! Yay! The crust didn't taste like pizza crust should, but I sort of figured a GF pizza crust would be hard to pull off, however the bread taste was good!  I will make a few tweaks with the next one, like adding some kick - cayenne, black pepper, etc, but overall this was DEEEEELISH!!!  (Baby signature begging pics)
