Sweet Stuff Sunday!! Oatmeal & cacao cookies...

Gluten free oatmeal & cacao cookies with sea salt! It's late, and I have had a jam packed weekend (full of porch cookouts, out-of-town visitors, baby goats, and watching some kiddos rock out while eating some poutine and drinking wine), soooooooo I will update later (maybe) with the full recipe. For now, enjoy the photos! 
 First preheat oven to 375, then cream the butter, brown sugar and sugar....
I used my new (old from the estate sale from Friday) mixer!! Whew! No wonder the housewives of the 50s looked good! That was quite a workout!

 ...then add your eggs and vanilla extract....
 In another bowl, combine the GF flour, baking soda, cinnamon, and salt....


 ..before adding to the creamed butter & sugar mixture....

 Fold in the oats,
 and then add the cacao.....
 Refrigerate for about an hour.....
 ...and then form into balls and flatten with a fork....


  Bake for 7-8 minutes and as soon as you take them out of the oven, sprinkle with coarse sea salt. The heat from the cookies will melt the salt enough to have it stick......
 I ate my first serving while looking through some funny old records I found at a thrift store yesterday...
